At 36 MONTHS, our cheese falls into the high seasoning ranges. It is more compact and dry than the low seasonings, at the same time crumbly to the touch and chewing. The straw yellow color becomes more intense and the flavor notes are noticeably accentuated;
excellent to grate to season a good plate of pasta with meat sauce, to make fondues
or creams to be used as appetizers or main courses.
